Hey geeky friends: How would one go about connecting a server to SMS in order to create an SMS application?

Depends on what you're trying to do I suppose. I found a page that describes the process somewhat - the second page at that link talks briefly about connecting an app directly to a server for a wireless provider.

If you're just looking to send alerts from a script, look into using an email address for the cell phone provider to send the message. One site I found listed the following for various providers:

T-Mobile: phonenumber@tmomail.net
Virgin Mobile: phonenumber@vmobl.com
Cingular: phonenumber@cingularme.com
Sprint: phonenumber@messaging.sprintpcs.com
Verizon: phonenumber@vtext.com
Nextel: phonenumber@messaging.nextel.com

as in the other post, and I'd just script everything to mail out. if you're talking alerts, i use nagios (well, zenoss, but same thing) so no worries there, really (it does SMS natively). all that said, I don't actually use SMS.

No, I meant automatically responding to an incoming SMS request like "status machine-name" or "poke username".
